Pumpkin Egg Bake
Makes 8 servings
Ingredients:
8 eggs WHITES
2 tablespoons chives
1/2 cup spinach
3 tablespoons onion flakes
3/4 cup bacon or ham cut into pieces
1 cup low-fat mozzarella
1 cup cooked pumpkin (canned or fresh)
1 tablespoon Parmesan cheese
dash of salt and pepper
Directions:
Preheat oven to 350 F.
Beat eggs until frothy, then add all ingredients except the pumpkin and Parmesan. Stir until combined, then gently add the cooked pumpkin. Pour mixture into a greased pie dish and sprinkle with Parmesan cheese.
Bake for 20-30 mins or until top browns.
