whole turkey breasts where i shop are always about $1.25 a pound
while i dont make them much in the summer cause i dont feel like having the oven on for 4 hours with no central air but in the spring and fall i do these a lot i get a 7-8 pound turkey breast and bake as per directions . when done let cool off to a point that it can be handled . i then trim off the skin
and carve all the turkey into smaller or thin slices and arrange on a cookie
sheet .
then ill go out to my grill and light only about 5-6 charcoal brickets
in the far side of the grill and let them get going ..
ill go make a marinade/ glaze of 1 - 1 1/2 tbs brown sugar mixed with equal parts of soy sauce and fat free italion dressing .. enough to disolve the brown sugar add some type of salt to the mix plain , season, mcormicks
montreal steak seasoning ect ..
then drissle marrinade on the turkey and toss the pieces around to get a little on every piece it dont need totally coated
i have some smoker wood chipps available at wally world .. while i dont have a smoker this is how i get around it
ill then place the cookie sheet of turkey as far from the small pile of charcoal
as i can and place just a few pieces of the hardwood chips on top of the charcoal also they smoke more if you wet them first
close the lid close all the vents in ten minutes add more wood chips
and close lid again i usually do this step about 3 times
then your done
you will get about 5 pounds of smoked turkey breast for about $8
and i guarentee it taste as good as 7 dollar a pound deli stuff
in the wintertime ill just add liquid smoke to the marinade and put the cookie sheet in a warm oven but turned off long enough to dry evaporate the marinade
