I have the butcher prepare the leg. He takes the bone out and wraps it with a little fat on top. Stick some garlic in it, sprinkle with all spice, onions, celery and carrots in pan. 350 degrees for around 2 hours, you either have to weigh it or use the meat thermometer (150).
