I eat a lot of tilapia since it's cheap, but eating the same plain food over and over sucks. It's hard to eat healthy if you don't enjoy what your eating. So I always try and find easy recipes for the foods I like, AND this shit was AWESOME !
Serves 4 - Hands-On Time: 15m - Total Time: 1hr 05m
Ingredients:
1 cup brown rice
4 6-ounce tilapia fillets
1/4 cup teriyaki sauce
1/4 cup fresh cilantro leaves
1/4 cup fresh mint leaves ( I didn't have any so I left mint leaves out and used basil)
2 scallions, thinly sliced
1 tablespoon fresh lime juice
1 teaspoon crushed red pepper
Directions:
1.Cook the rice according to the package directions.
2.Heat broiler. Place the tilapia on a baking sheet lined with foil and broil, basting occasionally with the teriyaki sauce, until cooked through, 7 to 9 minutes. Break into pieces.
3.Meanwhile, in a small bowl, combine the cilantro, mint, scallions, and lime juice. Serve the tilapia over the rice and top with the herb salad and crushed red pepper
