~2.5 pork tenderloin
Juice from 2 oranges
Juice from 1 lime
5 cloves garlic (crushed)
1/2 tsp dried oregano
1 white or sweet yellow onion cut into 1/3 inch thick rings
Salt and pepper to taste
Rub meat with seasonings place in Pyrex add onions and OJ and lime juice cover with foil, bake at 375 for 1 hour, remove from oven, use tongs to pull apart tenderloin, mix contents of Pyrex and bake another ~30 minutes.
Goes great with scrambled eggs, rice, even other bland protein sources.
