Sweet Potato Protein Pancakes

Makes 8 servings

SWEET POTATO PROTEIN PANCAKES


High in Protein! Enjoy with your favorite sugar free syrup or as is!

Ingredients
2/3 cup oatmeal
1 1/2 cup egg whites
1 cup sweet potatos, boiled mashed
2 tsp vanilla extract
1/2 scoop whey protein powder
1 tsp cinnamon
2 dash nutmeg


Directions
1. Boil and mash the sweet potato.

2. Combine all ingredients and mix throughly

3. Pour onto non-stick pan or pancake griddle cook 2-4 minutes each side.

If you add more egg whites but it wont taste good but extra protein but if you add flavour protein powder it would taste good. Simple

I added some toasted walnuts and it was INCREDIBLE! I usually drizzle a little honey, sprinkle on a bit of brown sugar and walnuts to do a sweet potato version of twice-baked potatoes. The apple recipe was amazing. I'm carbed up now, especially after the ribs, potato salad, baked beans I had earlier today!

Don't get the griddle too hot or you risk denaturing the whey protein to the point of degrading the amino acid profile. Has to be pretty dang hot though

I made this recipe this morning and it was great. I added a lil splenda and then another 1/3 cup of sweet potato because the batter seemed too thin. I will definitely be using this again.

Little variation

I tried these, but after I put the oatmeal, potatoes and egg whites together I realized I didn't have any cinnamon, but went ahead with it, plus I added about 2x the nutmeg it called for and a whole scoop of vanilla protein. They were great, tasted a lot like egg custard.
