well, since they took the microwave away at work, and i got sick and tired of drinking isolate... i came up with a dish that could be eaten cold, and it's YUMMY!!! :D

ingredients per serving:
2 large chicken breasts (with skin and bones)
2 cups of basmati rice
corn kernels
200 grams low fat cottage cheese
1 tbsp apple cider vinegar
1 tbsp olive oil

Cooking the chicken:
put the chicken breasts in a pyrex tray. splash the apple cider vinegar and olive oil on the chicken. sprinkle some spices on them (i use mrs.dash to keep it simple... don't use salt now, it'll dry it up)
cover the tray with aluminum foil tightly
put it in the oven and set at 300 F, and leave it in there for 40 minutes

While waiting for the chicken to cook, cook the rice.

after the chicken's done:
peel away the skin, and just tear the chicken apart with your hands (kinda like shredding it, but without the knife) and put the shreds of chicken in a bowl
add the 200 grams of cottage cheese to the chicken and mix them vigurously with a fork until it looks kinda homogenous.
add 1 tbsp of lemon juice, and some salt to taste, and mix some more.

put 2 cups of rice (measured cooked) in a plastic container, pour some corn kernels on top of the rice. and pour 1/2 of the chicken and cheese mixture on top of that. do the same with another container.

try it and tell me what you think ;)
 
I'm not so sure about the cheese and chicken mixture but I'm gonna try it anyway. I'm tired of the regular chicken rice and broccoli

Has anyone tried blending the chicke and just eating it like that? Cooked of course.
 
Will try this but I'll add some herbs... probably dried rosemary and whatever I find in my kitchen. :D
 
My mom usually has some cooked chicken on hand, so whenever I go to visit her, I have something very similar to this
