Why should cheesecake be EXTREMELY bad for you?
I asked myself the same question the other day LOL.
Then, while experimenting in the kitchen, wanting something sweet, I came up with this.

Ingredients
2 Packages of Light cream cheese
3 eggs, or 6 egg whites**
1 tsp vanilla
1 tsp lemon juice
1 1/4 cup splenda

Crust
1 cup almond meal***
1 tbsp oil
2 tbsp splenda
1 scoop chocolate whey

Prep:
Preheat oven to 375 F.

Combine ingredients for crust, and press into the bottom of a pan. Bake for 8 to 10 minutes, until beginning to brown.

Raise oven heat to 400 F

Put cream cheese in mixing bowl, and beat until beaten LOL. Add other ingredients. When all ingredients are combined, scrape edges of bowl as to make sure all ingredients are in the mixture. Beat one more minute, and pour mixture into pan over crust.

Put the cheesecake on a sheet pan in case of drippage. After putting the cheesecake in the oven at 400 F, turn the oven down to 200 F. Bake for 60 to 90 minutes, checking often after an hour. When the cake is firm to touch but slightly soft in the center, or the center reaches 155 F, remove from oven.

Chill for several hours. Top with fruit, if desired.

This will be the best tasting cheese cake youve ever had, honestly haha. Even better than fancy restaurant ones :)
I will be trying more experimenting later. I was thinking about adding a couple tbsps of jello sugar free pudding to the filling part of the mix, to make it a chocolate cheese cake. Do some experimenting with this recipe and let me know how it goes :)


**Please note that if egg whites are used, you must add slightly more oil. 1 or 2 tbsps should do it.
***Almond meal can be bought at the store, or made at home by blending almonds, do not blend for too long, as your meal may turn to butter.(which still tastes good, but not the purpose of this recipe :))

I wouldnt say fat free bro.. Its lower fat than any traditional cheese cake, but there is still fat content there (cheese, eggs) The point is, its healthier.
 
i did a vary the recipie a bit.. In total my cheesecake had

145g Protein
450g carbs
16g fats

tasted really well.. looking forward to next carb up on sunday :D

Allright.. i'll post in "gramms" instead of ounces and cups:


1) Mix:

250g Flour
60g Sugar
100ml Low Fat Milk (1,5%)
1/2 Tbsp. backing Powder
1 Tbsp. Lemon Juice.

Leave dough in the fridge for approx 30min.

2) Mix:

100g Sugar
1 Egg Yolk
750g Low Fat Curd Cheese
100ml Low Fat Milk
1 Package Low Carb Vanilla Pudding
125g Rum Raisins (or other fruit like manadrines..)
Rum flavouring (as you like)

Now fill the dough (1) into a cake pan (use non-stick spray or butter before).
After the pan is lined with dough fill in the cheese cake mix (2). Let it bake for approx 60mins at 170°C (340°F).

I often use some honey or strawberry marmalade as topping :D

I just tried this today!
It tastes pretty good. I topped with vanilla LBA mmm:D
