I normally can get bacon by the bulk. I always trim away most of the fat prior to cooking it.

Bison Bacon is rather tasty... there are several online vendors that sell it, and it very very low in fat. Most will smoke it to give that 'bacon-y' flavor.

That's the only way to cook it. So much better than in a skillet soaking in grease.

I've even cooked it in the oven on top of screened racks over a cookie sheet.

I normally fry my bacon until it's completely crispy. Love it that way....probably not the healthiest.
