What about Agave. Heard that was a good sugar/honey substitute.
Agave on the store shelves is not the same unrefined sweetner that is used by the natives of Mexico.. They use the core of the plant, similiar to the core of a pineapple, which mainly constitutes starch, similiar to corn.. This starch then undergoes a chemical process similiar to HFCS to create a sweetner that is about 70% fructose or higher in concentration.. That’s right, the refined fructose in agave nectar is much more concentrated than the fructose in HFCS. A natural agave product does exist in Mexico, a molasses type of syrup from concentrated plant nectar, but availability is limited and it is expensive to produce.
