some thoughts

if you think you favorite pro, got to the size they are with minimal gear because they have some type of super alien genetics, you my friend are in the fucking dark. DRUGS WORK!

What would be your go-to shoulder day? Assuming everything is fresh and healthy.
It has always been shoulder press, dumbell side lateral, rear delts (swap out several different variations). Now that my shoulders are so fucked I find front delt presses less painful and usually do those in place of shoulder press.
 
EVERYTHING in this sport should be "PROGRESSIVE".... Training, Food, Drugs.
Jumping from point A to Point R is pretty stupid though.

Barbell squats are rare these day but most of the time I do them it with heels elevated on wedges and I go EXTREMELY deep (lighter weight, don't go over 315). I tend to do leg press, V-squat machine, walking lunges, Adductor machine (always), leg extension, hack squat, pendulum squats, seated or lying leg curls (mostly seated), dumbell stiff leg, sissy squats.
Of course not all these in a workout but try and rotate these out (I have to go to both mega gyms to do this as I don't have all these in one gym).
I just go in and push my pain threshold Mountain Dog style.

When I was trying to get huge it was barbell everything.
Incline barbell - 405 for 7 reps was my best
Squats - 585 (6 plates) for 12 reps
Deadlift - 585 for 12 reps (slightly tore my lat on 12th rep)
Barbell shoulder press - I never went above 315 out of fear because I was having a lot of ahoulder problems from years of barbell flat benching) but 315 for reps (10-12), I did do dumbell shoulder press and I got the 150's for 8-10 reps (dumb for doing that).

^^^ that seems like a lifetime ago but to the best of my memory.

My heaviest bodyweight was 252 lbs, my strongest was at 230 lbs. At 252 I had horrible back pumps that affected my training. It usually came down to "when my shoulders were pain free"
