1 1/2 lb pork sirloin chops , sliced into strips
-you can sub. any protein here; sausages,chicken, beef, ground anything ,etc.
1 can unsweetened coconut milk
1 cup julienne green cabbage
1/2 lb asparagus spears (cut off about the last 1/4 of the spear)
1/2 cup cauliflower
1/2 cup broccoli
3 cloves garlic minced
1 1/2 tbsp. butter
1 1/2 tbsp. olive oil
2 tbsp. Curry powder - I prefer Massaman, but there are lots of different types of curry powders/pastes out there.
1/4 tbsp. Sriracha
Heat your butter + oil on medium/high heat. Add meat and brown. When the onions start to just turn clear , add garlic. Saute for a minute then add the rest of your veggies. You can turn your heat down a bit to Medium and keep a stir fry going for about 2 mins. Add the coconut milk and curry and stir to combine. Once your dish has an even color add the Sriracha and turn heat down to a simmer until the broccoli is tender(about 5 mins).
No rice here!
