I had never really considered buying the hearts but noticed how cheap they are the other day. Does anyone have a good recipe for them? I heard they are pretty tough if they aren't cooked right.
 
Beef heart has a strong flavor and is not for the faint of heart. Remember Heart is not an organ it's muscle and it can be tough depends on the cooking process.
I soak it in cold, salted water for about an hour before cooking to soften it up.

Ingredients
4 pounds beef heart
1/4 cup all-purpose flour
salt and pepper to taste
3 tablespoons butter
1 onion, chopped
2 carrots, chopped
2 potatoes, chopped
2 teaspoons dried thyme
1 cup beef broth
1/2 cup red wine

Wash the heart and remove any fat and arteries. Slice the heart in half, then slice it into 1/2 inch thick slices.
2. Dredge heart in flour and season with salt and pepper.
3. Heat the butter in large saute pan over medium-high heat. Add the heart slices and cook for 30 to 45 seconds per side.
4. Stir in the onion, carrots, potatoes, thyme, beef broth and wine. Reduce heat to low, cover and simmer for 1 hour and serve!

Just down the road from me is a place that sells free range buffalo. Since demand is so low for heart and liver they offer it for free with a $20 purchase. I agree on the taste, very strong. I started making it into jerky which for me is considerably more palatable. Next I am going to try to fully dehydrate it, grind it up and either sprinkle it on my steaks after cooking or mixing it in my burger.
 
I went to peru once and they sell grilled beef heart I actually liked it alot. My suggestions are if you have a grill season them good and grill em you will like it that way!

I don't have a dehydrator so jerky isn't an option right now.

I think I will try BigChef's recipe first. If I like it probably stick to that.

I was thinking of making a stew in a crock pot. Might play around with that at some point.

It would definitely makes eating a few pounds of meat per day quite a bit cheaper.

You do not need a dehydrator to make jerky. If you turn your oven on real low, and put a fork or something in the door so the moisture can escape it works just fine.
 
I looked up nutritional value of beef heart. Beef heart has 2x the collegen
and elastin of beef. lots og coenzyme cq . 20 grams prtein per 4 oz.
I'm going to give Bigs recipe a go . Thanks, T
