I'm not sure what you mean by "carb-combat." When trying to lose fat and retain lean mass I don't eat either rice or potatoes. For carbs I suggest sticking to maltodextrin PWO only (it's a complex carb), steel cut oats and quinoa. If you must eat potatoes make sure they're sweet potatoes not white.
Ezekial bread and cereal are both great carbs and if doctored up right can taste half decent. Super low glycemic (34 or so), high fiber, low fat, flour-less, and the protein is all complete. Cant beat it, but its a bit on the expensive side.
LOL... Yeah you need to do some work with quinoa!!! I like to saute garlic, onions and stewed tomatoes in a seasoned cast iron pan. Load up on the spices and it works for me. Actually has a fair amount of vegtable protein as well.
I only eat fruit right now d/t my trainer. However, otherwise, I'm all about red beans. I don't get affected by them gas wise. VERY low glycemic index/load, GREAT fiber.
Seriously, you can even blend them with your protein drink if you don't want to eat them... will barely notice they're there. Alot of asian fruit drinks mix beans with them and it surprisingly works very well.
