This has been haunting my dreams for weeks! I can't wait for Thanksgiving!

Ingredients
2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites
Directions
Preheat the oven to 350 degrees F.

For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.

For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.
 
I love sweet potatoe pie but just as much so I love sweet potatoe caserole! Warm, creamy, delicious goodness!

FYI, that pie takes an hour, 35-45 mins won't get it cooked all the way through.

Sweet potato pie is one of my favorite foods in the world! I've never tried to make that recipe, though. I just looked up the recipe I use, and it's called Sweet Potato Casserole. Looks like a variation of sorts. I love the pecan crust topping!

DIRECTIONS:

3 c. mashed sweet potatoes
3/4 stick butter
1 c. cream (can milk will do)
1 1/2 c. sugar
2 eggs
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Beat eggs in a separate bowl. Combine above ingredients. Add to beaten eggs. Place in 9x13 casserole dish and bake 15 minutes at 425 degrees.

TOPPING:

1/2 c. crushed cornflakes
1/2 c. chopped pecans
1/2 c. brown sugar
3/4 stick butter

Mix well and pour on top of potato mixture. Bake 15 minutes more.

* You can also add marshmellows to the topping for extra gooey yumminess.

Now I'm drooling. Why does everything sound so much more appealing when I'm dieting?! LOL :p

Here is a version that is a little more bodybuilder friendly:

1 lb Sweet potato (steamed and mashed)
1-1/4 Cup Plain yogurt (skim milk type)
1/2 Cup Brown Sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
4 egg whites
1 whole egg
Pinch of salt
1- 9 inch frozen pie crust - thawed (whole wheat )
Handful of pecans (i use about a 1/4 cup)

Combine sweet potatoes, yogurt, brown sugar, cinnamon, nutmeg, egg whites & whole egg, salt and blend until well combined.

place pecans on a dry cookie sheet and roast in 375 degree oven for 10 min or until lightly toasted.

Place mixture in thawed pie crust and top with chopped toasted pecans.

Turn oven temp down to 350 degrees and bake pie for 50-55 minutes or until your toothpick comes out clean.

Looks good im going to whip one up tomorrow, shit its only 11:30 I can still make it to walmart and get one whipped up tonight, thanks
