a new twist on my breakfast

i've been making this for breakfast and really enjoying it so i thought i'd share it!

scramble up some eggs with black beans and avocado. when finished put some salsa on top and mix it up!!!! its delicious!

Avocado makes anything taste great IMO lol. I love the stuff.
 
Cilantro and lime will go with that as well...or try some queso fresco cheese-its a mild white cheese thats lower in fat than most.

I get an omelette similar to that at a little restaurant near me. It comes with sour cream on the side. It is excellent! They put onion and bell pepper in it, maybe you would like to try them in yours.
 
u could allways try low or fat free cheese if ur worried about makeing it too fatty. id wrap it up in tortilla make a wrap out it.
 
Breakfast is my hardest meal to get in. I dont wake up hungry but this might help.
 
I get avoiding cheese if you have a negative reaction to it, if i eat too much it ruins my digestion and i get congested from it but I see nothing wrong with adding the extra fat to breakfast.

I get grass fed cheese for cheap at Trader Joes. Have to give credit to mountaindog, for inspiring me to try it out but spending the extra cash when it comes to dairy/eggs/beef to get grass fed or cage free stuff makes a huge difference. Cage free eggs scrambled in coconut or macadmia oil with cilantro, peppers, avocado, and grass fed cheddar jack cheese is a great breakfast.

I drink coffee with grass fed cream in it too. Can you tell I am a high fat, moderate carb guy?

This is hands-down my all-time favorite breakfast! I have been eating this for years! :headbang:

ToDouble, do you cook your own black beans? I always cook a large pot and freeze 1/2 for the week. Super easy to do and once you taste these, you will NEVER eat beans out of a can again! Give it a try.

1 lb black beans soaked in cold water over-night
Drain and rinse and in a large pot…
Add 6 cups water
1 bay leaf
1 cube chicken bullion cube (I use the Korrs "caldo de pollo" from the Mexican section of the grocery at my wife's recommendation, 1 tablespoon, its in a little green jar)
Bring to a boil, and then simmer covered @ 2 hours (I like my beans soft)
Done! Tasty and soft! And you have enough for a week at the cost of $1.50!
