1 package w.w. or multigrain tortillas
1 can black beans
1 bunch Kale(chopped)
1 large sweet potato(peeled and small dice)
1 cup multi colored quinoa
2 cup water or broth
1/2 cup shelled edamame
2 cloves of garlic minced
1 large avocado thinly sliced
2 tbl olive oil
salt , pepper ,cumin and curry as suggested seasonings.
bring water (or broth) to boil add edamame and quinoa cook for approx 20 mins or until all the water is absorbed. Set aside.
In large pan over med high heat saute kale , sweet potato and garlic in oil until soft. Add black beans and combine until warmed.
Heat tortillas in moist paper towels in the microwave for approx 35 seconds.
Place heaping spoonful of quinoa in tortilla , add ingredients from pan and garnish with avocado slices.
Portable, very healthy and delicious.
