I cut them up into little pieces and put them right into my salads. I love em. The problem is, I usually forget about them when I'm at work putting my salad together :/ .
The easiest way for me to cut them up is cut them in half, remove the pit, and then cut into the each half length wise then cross wise, using the shell as a natural "cutting board". Kinda hard to explain, but its wayyy easier than peeling them and slicing and dealing with all that bs.
My friend is Brazilian and he blends them into smoothies. It might not sound too appetizing, but they are the best smoothies I've ever had.
