32 oz flank steak(one big one, or a couple of small ones)
1 lb 98%fat free meatloaf mix(the ground pork, beef, and veal..or you can buy them all seperately)
2 cloves garlic minced
1 tsp oregano
salt and pepper to taste
1/4 to 1/2 cup romano cheese
1 egg
butchers twine or wood toothpicks
fresh chopped basil and parsley (total of both is 2 tbsp)
first take the flank steak and pound it verry thin.
the in a large bowl mix all the other ingredients verry well
take your steak pieces(you want about a 3 inch by 3 inch squares.
now roll the stuffing in the steak like a sushi roll
tie them together so they dont open up
put 1/2 tbsp olive oil in a pan and brown them off.
pre heat over to 350
put in a baking dish and cover them in maranara sauce and bake for 40 min.
i like them with roasted rosemary red bliss potatoes.
ill post a great recipe for pasta sauce alittle later, its all natural with only 1/4 tbsp ovile oil.
