Anyone ever use or have any recipes using carbalose flour for baking? Cookies, brownies, pizza, bread, apple pie, etc.? 30 Grams of protein per cup...YO!
I did a Apple Crisp with Publix frozen vanilla yogurt...yummo!
I used a elanaspantry.com recipe and modified with what I had available.
Apple Crisp:
2 cups blanched almond flour [I used 1 cup coconut flour, 1 cup of carbalose flour] I had about 1 cup left over.
1/2 tsp. sea salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 cup grapeseed oil [I used EVO & coconut oil] I rather use something other than the EVO in this deal, but only oil I had. Coconut oil goes well though with sweets. Plus it has a good amount of MCTs with a readily available energy source. Doesn't get stored as fat.
1/4 cup agave nectar [I didn't have any, so I used honey instead].
1 tbsp. vanilla extract [I used almond extract].
5 medium apples, peeled, sliced, cored, chop in half width wise. [I used golden delicious]. Doesn't matter what apple you use.
1. In a large bowl combine & mix dry ingredients.
2. In a smaller bowl combine & mix wet ingredients.
3. Combine & mix wet & dry ingredients.
4. Place apples in a 2-3 quart glass pyrex baking dish. [I used a square glass 8"x 8" dish].
5. Sprinkle topping over apples. [I sprinkled some in between layers of apples].
6. Cover with Al-u-min-num-mum-mum foil and bake at 350 degrees for 50 mins. on low rack.
7. When apples are soft and there juices bubble, remove cover and bake for 10 more minutes to brown crisp.
8. Let cool, but warm, put couple of scoops of frozen vanilla yogurt on top. Drizzle with Honey, nuts, dust w/cinnamon, etc.
It was cooking kind of dry, so I added some natural apple cider and cooked awhile longer. Still pretty good though.
Apples cored a halved on the barbecue grill, cool, add frozen vanilla yogurt is yummo as well.
