I do this with Zucchini, but shit even that adds up. Ill grab it if i see it on sale. Usually 2+ a lb in my head im just thinking thats a lb of chicken.
I just eat lettuce/spinach with fat free italian/hot sauce or spicy mustard.
If you know how to cook you can make anything that tastes bland taste good without adding many calories to the meal. Something as simple as lemon juice with some spices could do wonders. Glucomannan noodles are another example of a food low carb guys could use and make taste nice.
I just had the cauliflower tator tots with venison meat loaf. It was really good. You just have to cook them about double the time they say to get them crispy.
