Ok so I'm cleaning up my diet as I'm 22 weeks out as of tomorrow. I wanted to throw something together that was clean and low carb.
I had a few things in the pantry I wanted to go ahead and use and this is what I came up with and it was ridiculously simple and good...
Ingredients needed:
12oz flat iron or shank steak either one is good this way.
2 cups of sauerkraut
Heirs radish sauce
1 large minced white onion
Garlic powder
Salt and fresh ground pepper
Extra virgin coconut oil (this is the only oil I'm cooking with as of right now)
Cut steak into fajita style strips or mince.
Braze the meat on both sides with oil in a large non stick skillet. Get a nice color then add a cup and a half of water. Add onion and seasonings(hold off on the sauerkraut) Cover the pan with a lid then let it simmer for 20-30 minutes depending on thickness of cut.
After it simmers remove the lid and add the sauerkraut let the water boil off the meat and dry it up a little. Then simply add heirs radish to taste and serve hot.
Again not a real complex meal but is delicious when your going low carb and really want something with some flavor and a good kick.
