this one is for the BIG BOYS!
1/2 lb white meat chicken
1/2 lb Anduille saisage
1/2 Lb small peeled and deveined raw shrimp.
1 large can crushed tomatoes (at least 10 oz)
1 yellow onion(diced)
1/2 jalepeno(diced, wear gloves and dont pee without washing your hands first TRUST ME)
3 cloves of garlic minced
1 green bell pepper juliened (cut into thin long strips)
1 tbsp olive oil
1 tbsp CAjun seasoning(use your favorite brand)
4 cups water
2 cups uncooked brown rice
ok first, get that tbsp of oil really hot in a but spaghetti pot.
put in the chicken and sausage and stir on high heat until the chicken is cooked all over the outside(inside will still be kind of raw, about 3-5 min)
next get all the raw veggies in except the tomatoes.
stir for another 3 min.
add the rice and stir another min.
add the tomatoes and the juice in the can and stir it all together.
next comes that 4 cups of water.
once it boils turn it down and simmer it with no lid until the rice is cooked(taste as you go!!!!!!) if the rice is still alittle too crunchy add more water 1/4 cup at a time. last take it off the heat, stir in the raw shrimp(stir it really good) cover it and let it sit for a god 5 min (the left over heat will cook the shrimp perfectly) next taste it, see if it needs any more seasoning. the eat the crap out of it. if you want you can add 1/2 cup of white winewhen you add the tomatoes, i find this makes the chicken alot more tender and juicy.
if you go to whole foods or if you just have a really good store you can find the canned tomatoes where the only ingredients on the can are tomatoes, water.
