If you don't really like drinking/bars/clubs and limited parties(year I'm unsocial so what lol) is there still alot of fun stuff to do in Vegas? I'd like to go next year to the O..but my Fiance said there'll be nothing to do b/c I dont do any of that above.

I had a business out in Vegas for a few years so I spent about a week a month there. After I sold it I didn't go back for a few years. The last visit I took my gf and her family who was visiting from Italy. I gambled maybe 15 minutes total and went to zero bars and had a great time.
First of all, if you have never been, just the magnitude of the architecture is astounding. The replica eiffel tower, the fake canals in the Venetian, multi million dollar works of art in the Bellagio. The fountains of Bellagio at night are mesmerizing. The shows, Cirque de Soleil et al.
During the day the pools are awesome but pretty partiesh. You can take a day trip to Hoover Dam, you can go to Lake Mead and rent a boat or take a boat ride. My personal favorite was the plane trip to Grand Canyon where you actually land at the ranch in the canyon! You then take four wheelers to the edge. Unbelievable. This ranch has an airstrip and helicopter pad to take rafters out of the river and deposit them back in Las Vegas. They have rustic overnight visits as well but I did not do that.
The restaraunts are fabulous. Las Vegas is the #1 place in the country to sample offerings from some of the best chefs in the country. If a hot restaraunt opens in New York, Miami, San Fran, the second outlet is bound to be in Las Vegas. This is because the broad demographic of visitors is a true litmus test of rolling out the concepts to the rest of the country.
You can spend days and not get bored without being a drunken, fool, although, sometimes that is ok too.
