To my knowledge this has not been answered....We know these 2 spike insulin, so why are they the main ingredients in "Equal" which "has only a negligible effect on blood sugar" and is endorsed by the American Diabetes Association?

The amount is so small that it is not enough to cause an impact.

I've been to the plant where they make Equal. You don't want to put much of that in your body. When it is heated it is highly unstable.

The chemicals they use to make it are so caustic that the employees have to wear protective equipment in the plant. The production process heats the chemicals and caustic by-products - if introduced into the lungs - are potentially deadly.

Injuries in the plant are fairly frequent - injuries from the materials that make up the harmless little sweetener.

Thanks. This was the only logical explanation. However, now I'm wondering if you cook or bake with it, how much is too much?
