I got this idea from an MSN article I read about things to do with chicken. I made this and it is very simple and EXTREMELY convenient.
Here it is:
1) Cook 1-5lbs boneless chicken breast (according to your needs for the next 3 days) thoroughly so the meat is nice and stringy. Preferrably on the grill, but boiling or bakeing work too.
2) Let it cool for about 10-20 minutes
3) Pull apart with your hands. Pull with the grain so the meet strings out nice and thin.
4) Put in large container with a top
5) Mix with your favorite BBQ sauce. I used 2tbsp hellmann's light mayo, 6tbsp jack daniel's BBQ and 1tsp texas pete hot sauce.
6) Cover and put in fridge.
7) Warm it up and eat it plain or put it on a sandwhiches w/ or w/o cheese. Wrap in tinfoil and you've got chicken sandwiches for the whole work day!
