Sweet Potato casserole:
Boil sweet potatoes until very soft (can skin before if you don't like the skin.
Mash with 2 eggs, 1/4 cup milk, vanilla extract, honey, maple syrup, and cinnamon to taste.
Can add candied pecans to top if you aren't worried about mixing fat and carbs.
Bake at 375 for ~ 30 minutes.
For my contest diet, I make this but use egg whites, no milk, and stevia instead of syrup/honey. Low fat, tasty carb source for post workout meals!
