Bison Matambre with Bacon Wrapped Onion Rings
1lb Bison Flank Steak
1 Carrot
1 Red Bell Pepper
1 Banana Pepper
2 Hard Boiled Eggs
2-3 Garlic Cloves
Baby Spinach
Fresh Basil, Parsley, Oregano
Ground Cumin
S&P
Sweet Vidalia Onions
Bacon
Preheat oven to 350*F.
For the flank steak, either butterfly it or pound it with a meat tenderizor to get it fairly thin. Lay out the baby spinach on the flank steak, leaving an inch or two along the sides. Cut the carrot, bell pepper and banana pepper into thin sticks and lay over spinach. Dice the garlic clove and spread over steak. Slice the hard boiled eggs into slices and spread over the steak. Top it off with fresh chopped oregano, basil and parsely. Season with salt, pepper and ground cumin.
Foll the flank steak up and tie it with butcher's string to keep it together.
Heat up some ghee in a fry pan and sear the rolled up flank steak all around. When it's seared put it in the oven and bake at 350*F for 20 minutes or so, until desired doneness.
Remove from oven and let rest. Remove string, slice and serve.
For the onion rings, cut the onion into thick slices, about 1". Push out the center rings so you're left with 3-4 of the outside rings. Wrap the bacon around the onion. Use toothpicks to hold it in place. It took my 3-4 slices of bacon for each onion ring. Grill them at 350*F until the bacon is completely cooked. We all know what cooked bacon looks like. It's better to keep the heat down and grill for a long time with these so the onions become nice and tender. High heat will cook the bacon before the onions and it won't be as good.
Mix some mayo with a few diced chipotle peppers and adobo sauce to desired heat level. Dip bacon-wrapped onion rings in chipotle mayo.
