I have probably made over 1000 healthy salads in my life, and have at least 50 personal recipes. This salad takes some time to prep, but its definitely my favorite! This is how a typical meal will look for me when I'm on a hard core diet, when complex carbs are really low.
Here are the ingredients to the one I just made:
-Greens/Lettuce (I used Kale, Endive, and Romain lettuce)
-Lean chicken breast/strips, Lean sirlion steak strips
-raw egg yolk
-1 whole hard boiled egg
-real bacon bits
-Olive oil
-Dijon Mustard
-Low fat Mayo
-Garlic powder
-salt/pepper
-BBQ seasoning
-red wine vinegar
Start by boiling some hard boiled eggs.
While that is going cook the chikcen, Start with lean cut strips mix them in a bowl with 1 raw egg yolk, 2 Tbps olive oil, 1Tbsp Dijon Mustard, Salt & pepper, garlic powder, Red wine vinegar, 2 Tbsp bacon bits. Now let the chicken marinate in this about 30 mins. Fry the chicken on medium/high heat for about 15 minutes.
After the chicken is fried good, I will then transfer it to the grill (foreman grill in my example) and let it grill for about 10 more mins. (I also grilled top sirloin steak strips.
While the chicken cooks cut up about 1c of each of the following: Endive, kale, Romain lettuce. I will toss the salad in a large bowl, and add lemon juice, pinch of garlic powder, salt & pepper, red wine vinegar, a bit more of olive oil, real bacon bits, 1 Tspn Dijon Mustard, 1 Tbsp light mayo, I will crush a hard boiled egg yolk in the mix, and chop up the egg white.
After the chicken/steak is done cooking, add the fine cut strips into the salad and toss some more. Thats it, yes a lot of steps take about 30 mins, but it taste awesome. Give it a try! If any one makes it please leave some feed back.
If in a hurry you can also make the same salad with tuna from the can, and use raw egg yolk in the salad instead of hard boiled. You can tweak the fat content around your diet as well. Fats are always high when I diet so these are perfect macro's for me.
