I am 33yo 5-10 205lbs, and I have been told everthing from 1 gram of protein per 1 pound of bodyweight, but some say the body wont use that much and it is wasted....any help???

Yeah, I would say if you want to see noticeable, sizeable gains, eat your body weight in protein every day. IE, I weigh 175 lbs, I eat about 170-180 grams of protein everyday.
