The diet issues are directly related to overconsumption of calories which make people fat and lifestyle choices. Veggies are hard to overconsume. In all of these studies the problem is the participants.I think other diet factors need to be considered as well. According to a CDC report i saw last year the average American eats less then 3 servings of veggies a day. They get more nutrition from the coffee then from veggies. But i agree with weight being an issue. In Japan it seems they do not eat whole grains, or go to gyms less and eat way more sodium then Americans but live longer. But are less likely to be over weight.
No studies that correlate x food with x health problem are using participants that are relatively healthy and aren't over fat.
The ones that use rodents they're overfeeding them and making them fat.
There is not a single person who is not fat who has developed type 2 diabetes or any other health issue from consuming a certain type of fat or any food.
