I know I'm late in this post, (two months) but have you ever checked out the low carb tortillas from La Tortillas Factory? They are great for wraps and enchiladas. Just one wrap alone has 8 gm's of protein, 12 gm's of fibre, and 6 gm's of net carbs. I've use them mainly for making chicken and turkey wraps. I have used them for making enchiladas in the past. You can definately make a enchilada sauce to your liking by searching the web or just by googling it.

Whole grain tortillas and low fat cottage Cheese!
Enchilada Sauce- 1 can (can find low sodium if needed)
1 1/2 lbs chicken breast
Whole grain tortillas
1 small Spanish Onion
2 cups low fat Cottage Cheese
Poach chicken breasts in 2-3 cups of water.
use a blender or food processor to shred chicken and add onion.
In medium saucepan, add 3/4 cup enchilada sauce to chicken and onion mixture.
Turn off heat.
Add 1/2 to 1 cup low fat cottage cheese
Fill tortillas with about 3 tablespoons of enchilada filling.
Roll up and place fold side down in baking or casserole dish.
Top with remaining 1/4-1/2 cup sauce or your favorite topping.
