Got this from a friend
1 tsp olive oil
1.5 cups chopped broccoli
2/3 cup low fat cheddar cheese
1 cup greek style yogurt
1 whole egg
1 tsp oregano
1/4 tsp sea salt
fresh ground pepper
Preheat oven to 350 spray 10 cups of muffin tray with olive oil spray
Heat oil in skillet, add broccoli for 5 minutes
Evenly spread out cooked broccoli and 1/2 of the cheese into the 10 cups of the muffin tray
Whisk everything else together, then pour evenly over broccoli and cheese cook 20 to 25 minutes until edges are brown.
Cool 5 minutes serve or put into fridge until ready to eat
Calories are per serving (2 quiches)
