Ok, for those of you who are dieting here is something that tastes like garlic mashed potatoes.
Take three cauliflower heads, cut into pieces and clean.
Put in steamer and steam for 15 minutes, until very mushy.
Get a potatoe ricer and put the cauliflower in, when you first start to squeeze down on the ricer extra water will come out, don't put that extra water in the mixture. You can also do this into a fine strainer to get all the extra moisture out.
Let the cauliflower sit for a few minutes to drain.
In a small pan, spray with pam and add some minced garlic and slightly saute.
Make sure your cauliflower mixture is as dry as it can be and put it in a large mixing bowl.
Add organic chicken broth for moisture, don't pour too much in at a time.
Add onion powder, salt, pepper and I can't believe it's not butter spray and sauted garlic to taste.
I've been dieting for a few months and this has really helped with my starch craving, I missed potatoes.
