Sorry I didn't bother to take pictures. I will cook some again later next week so I will do the complete picture how to then also.
Ingredients:
2.5lbs Lean Chicken Breast Cubed
Weber's Kick'n-Chicken Spice mix
Ty Ling General Tso's Sauce (28 servings in a bottle, I used roughly 20 servings because it was already open from previous batch)
Peanut Butter
1 bag HEB Green Been Stir Fry
1 bag HEB Sugar Snap Stir Fry
Extra Virgin Olive Oil, or Coconut Oil for Cooking
How to:
2 tablespoons of room temp (solid) coconut oil in stir fry pan.
add cubed Chicken Breast and enough to Kick'n Chicken spice to give some good flavor.
When the chicken is cooked about 80% add 1 tablespoon of peanut butter, stir as it finishes cooking the meat (should only be about another 5 mins now).
Place meat in your food container for later, keep warm.
Now add 1 tablespoon of Oil (coco/evoo whatever you choose) to the empty frying pan.
Dump both bags of HEB frozen veggies in, put stove heat medium and cover to allow to steam. When the veggies are cooked about 50% add your General Tso's Chicken Sauce and 2 tablespoons of peanut butter.
Continue cooking until veggies are nice and tender/fully cooked.
Add chicken back to this and stir in nicely. Cover and cook for around another 5 mins to allow the flavors to really mix.
Done!
Now enjoy your Healthy General Tso's Chicken!
This should make roughly:
~267 g protein
~240 g carb
~80 g fat
For me it makes 6 meals at roughly
~44.5g pro
~40g carb
~13.333g fat
I'll update this later with pics and really nice how to. I just cooked it yesterday so I have 5 meals left (ate some this morning) before I cook again. I usually do this about 2 times a month or so. Just anytime I am feeling like cheating on my diet I pull out my healthy "cheats" from my arsenal to keep my head on straight.
