Chicken Chili (aka white chili)

Its chili season!!! and this is a hi-protein and lo-fat version

In a large pot, saute 1 medium diced onion and a diced clove of garlic with a few tablespoons olive oil.

Add diced skinless/ boneless chicken breast (as much as you like, I throw in about 5 or 6 because I like the protein and it makes more to eat on for another meal or two). Mix with the onion and brown a bit.

Add 2 cans lo-fat chicken broth
1 16 oz bag of frozen yellow corn
2 drained cans of white beans
3 or 4 fresh jalapenos cleaned and diced, depending on how much heat you like (or even more!)
Season with whole cumin seed to taste (I like a lot in there, maybe 6-8 tablespoons)

Cover, let simmer about 30 minutes until done
If you like your broth thicker, you can sift in a little cornstarch or a little flour to thicken it.

Its really tasty like this, but if you want to get a little decadent, sprinkle your serving with shredded cheese and serve with tortilla chips

Brick you are a life saver! I've exhausted all my healthy chicken recipes and been eating eggs and lean beef for the last 2 weeks trying to avoid anything with chicken in it. This recipe makes chicken look yummy again. I'm definetly giving this a whirl this week. Thanks for posting up.

That sounds like a plan, definately worth a try. I usually make my chilli the same as traditional chilli, but instead used ground turkey or chicken. I also use a ton of peppers, you name it: Habanero, serono, Jalapeno, Banana, Perone and dried red peppers. But yours is truly different! Thanks for sharing.

Not sure... that's what the woman that gave me this recipe said. Seems to me that ground would work too though.

Made this on Sunday, terrific. Added a little chopped fresh Cilantro upon serving and a little green tabasco. Going to certainly put this in my rotation!
