Its chili season!!! and this is a hi-protein and lo-fat version
In a large pot, saute 1 medium diced onion and a diced clove of garlic with a few tablespoons olive oil.
Add diced skinless/ boneless chicken breast (as much as you like, I throw in about 5 or 6 because I like the protein and it makes more to eat on for another meal or two). Mix with the onion and brown a bit.
Add 2 cans lo-fat chicken broth
1 16 oz bag of frozen yellow corn
2 drained cans of white beans
3 or 4 fresh jalapenos cleaned and diced, depending on how much heat you like (or even more!)
Season with whole cumin seed to taste (I like a lot in there, maybe 6-8 tablespoons)
Cover, let simmer about 30 minutes until done
If you like your broth thicker, you can sift in a little cornstarch or a little flour to thicken it.
Its really tasty like this, but if you want to get a little decadent, sprinkle your serving with shredded cheese and serve with tortilla chips
