I have been making this a lot lately, it's pretty good to change things up with chicken otherwise it gets really boring. All you need is:
a lime
a whole chicken (you can use breasts if you prefer)
some olive oil (extra virgin or light, doesn't matter)
salt
chili powder
preheat your oven to 400 degrees
cut the lime in half and squeeze the juice out of half of it onto the chicken.
save the other half of the lime and let chicken sit for a minute to soak in.
pour a light coating of oil over the chicken (use a grill brush to even it out)
sprinkle with salt and chili powder to your preference
put the chicken in the oven for 40-60 minutes depending on weight.
about halfway through cooking, take it out and squeeze the other half of the lime over the chicken and put it back into the oven until fully cooked.
