dude, i have a crappy appetite as well, so I know how hard it is to eat a lot of calories, but like OF said, it's not always the quantity but more so, the quality! Trust me, I learned this the hard way.
pay close attention to the calories, also, eggs are so easy to prepare it's no joke. I can fix 6 eggs quickly! 6 eggs+a can of tuna+ an apple or two oranges... pears..whatever... olive oil... coconut oil...
I used to put to much thought into things, but if you just sit back and look, it's far easier to take in 3-4k worth of calories than you can imagine (if that is how much you want to consume anyway, if you're taking in 2-3K, it's even easier)
