More Important: Calories or Ratios?

Over the past year, I've been watching my food intake pretty meticulously and noticed a big difference (270 to 225).

My question is this...
Which is more important: Calorie per meal, Or food ratio per meal?

I can get the macrobiotic nutrient ratio (42carb [15% fiber, low sugar,80% whatever]/40protein/18fat) down pretty easy; but I'm usually like 100calories/meal over. If I try and fix the total calories, I usually end up falling short on the fat, and high in protein.

A lot depends on what your goals are.

I'm eating a little bit above BMR and am staying about the same body weight, but transitioning - BF to LBM. I'm relatively small and am doing this on around 2800 cals. I'm concerned about not exceeding that daily limit and to get in frequent meals with protein at each meal. I try to get in 300-350g ED of protein.

I avoid "sugar" altogether, other than on my cheat day (1x week). I also found out, for what I'm doing now, taking in less fat and using "good" complex carbs to maintain calorie range works better. My body tends to put on or keep fat when I eat it (even "good" fats). I can put on LBM when bulking and utilizing good fats, but seem to still gain too much fat. If your eating "food" protein, you're going to get fat whether you want to or not.
