My Huevos Mexicanos Breakfast

First, every week I prepare a big pot of home cooked black beans:
With 1 lb presoaked (overnight) rinsed black beans I add…
6 cups water
3-4 cloves garlic minced
3 bay leaves
2 chicken bullion cubes
Cook covered on a slow simmer about 2 hours then add 1 sliced green pepper and cook 1 more hour

Now for breakfast I scramble in a pan sprayed with a little Pam…
1 whole egg (optional) mixed with 6-7 more egg whites and a couple of tablespoons of Rotel diced tomatoes and chilis

Serve with a cup or two of the black beans on the side… maybe some fresh fruit in season. High protein and fiber. Guaranteed VERY tasty!
 
Sounds delicious but my workout partners have forbidden me to eat garlic :eek: I'll have to try that without the garlic.

I love mexican food. Will try this soon.
 
Try adding this for a topping.

Tomatillo sauce:

In a pot boil around 6-8 fresh tomatillos until skin starts to peel.
Put in a blender or food processor.
Add around 3 cloves of garlic and 1/8 of an onion & 2 Jalapenos or Serrano chilis

Blend until like a chunky salsa.

Add salt/pepper to taste.
 
Salsa verde! Very good idea! I love that stuff! I never heard of tomatillos until I married my little woman. Its a great way to add low calorie flavor and zing

I keep mine sealed in a container for a week in the fridge and they are great. They never last more than a week because I always eat them :D I think they get even tastier after a day or two because the flavors mingle.
