First, every week I prepare a big pot of home cooked black beans:
With 1 lb presoaked (overnight) rinsed black beans I add…
6 cups water
3-4 cloves garlic minced
3 bay leaves
2 chicken bullion cubes
Cook covered on a slow simmer about 2 hours then add 1 sliced green pepper and cook 1 more hour
Now for breakfast I scramble in a pan sprayed with a little Pam…
1 whole egg (optional) mixed with 6-7 more egg whites and a couple of tablespoons of Rotel diced tomatoes and chilis
Serve with a cup or two of the black beans on the side… maybe some fresh fruit in season. High protein and fiber. Guaranteed VERY tasty!
