sweet spicy peanut ginger chicken

cut 3 chicken breasts into medium sized chunks
slice 2 peppers into thin strips(i cut them the long way)
mince approx. 2" of fresh ginger
in a large pan saute' all of these in coconut oil on high heat

while thats going...

in a glass pur about 1/4 cup franks redhot
stir in tbsp brownsugar
sir in heaping tbsp natural peanutbutter
mix with fork until it turns into a paste

once chicken browns on one side flip it
(you may have to drain excess water from peppers to brown the other side)
brown other side
turn heat to low
stir in sauce
add 1/2cup unsalted peanuts
turn off heat
serve

this stuff is good by itself, over rice, or over potatos

To save on sodium you could use some Bragg's liquid aminos with a dash of sirachi sauce.
You could also use Walden Farms 0cal peanut butter (more like a pudding) to cut out more fats.
I make something similar to this with just chicken ginger peppers and onions but not any coating or anything.

thats cool you can figure out the breakdown like that... i never realized how much sodium is in franks redhot. i'm going to look for a low sodium hot sauce to substitute. thanks
