I love fish but I kinda get tired of baking and grilling, so here's a different, healthy one for you
In a skillet:
Saute in a little olive oil, 1 medium diced onion and 1 or 2 cloves crushed garlic
Pour in 3/4 can fat-free chicken broth
Place 2-3 fillets of tilapia
Cover fish with 1 big can rotel diced tomatoes (mild or spicy, its up to you. I go with mild since its fish)
Cover and cook over medium heat until almost done (this fish cooks fast so watch it)
When almost done sprinkle with about 10 sliced green olives
cover and finish cooking another couple of minutes
Serve with a side of rice
