I use this recipe once a day and it's great and I get a ton of fiber at the same time


Take about 3/4 cup Baby Arugala, chop finely add to 1 cup of white rice
2 tbl spoons salsa verde
1/2 squeezed lime juice
1 tbl spoon Virgin coconut oil
1/2 diced tomato

Just mix it all in add some more salt to taste. Really wakes up your rice. Thought I would share

The coconut oil and salsa combo sounds delicious. I would never have thought to combine the two. Thanks for the suggestion!
Sure thing man.. You can also take your virgin coconut oil season a non stick skillet with it get it hot then add your cooked rice and verde back in stir it up for a few minutes on medium high then turn the heat off and cover.. This is good when I really want something hot and it just gives it a better texture. You can also add some cooked ground turkey (chopped fine) doing the same process. A little fresh lemon or lime juice is just icing on the cake.

Let me add that jasmine rice has worked best for me. Basmati just has a weird texture, sushi rice is too sticky and regular long grain is just kinda gummy. But they all have the same nutritional properties so whichever one you prefer.

Always have my rice cooker loaded up with some good quality jasmine.

I do something similar, adding lime juice, coco oil and chopped cilantro makes rice delicious. Youll think you're cheating
