Take you some 7-9 oz fillets of Catfish and cut them down the center making them long and narrow. Season both sides with Granulated garlic, Greek seasoning and cayenne.
In a skillet or griddle, allow olive oil to heat to medium high heat and place fillets skin side up. Now i know that there is no skin on them but you can tell which side used to have skin and you want this side up or the fillet will curl up. Cook this about 6 to 7 minutes or until it is nice and crispy then flip it and do the same for the other side. Plate fish.
In the same pan add onions and bell peppers that are sliced. (There should be some oil left from the fish cooking)Add some fresh garlic and let this go for a minute and add you mushrooms. Then after another minute add you fresh spinach. Season it and then deglaze the pan with a lil water or wine to wilt spinach and marinade the drippings.
Plate spinach then put your fillets on top. Enjoy
