I've never posted a recipe here, but this is one I just had to share. I know most of you hard core guys don't have any problem scarfing down cold rice or oatmeal for your carbs while on the go but here's a way to make them actually edible... I wish I could take credit for the recipe but I found it on a website.
Sweet Potato Muffins
8 oz sweet potato baked/mashed
2 cups old fashioned rolled oats - uncooked
1 cup egg whites
1 whole egg
1 Tbs Vanilla
1/4 Cup Splenda (I add a little Stevia as well 'cause I like 'em sweet)
1/2 Tsp Cinnamon
After the potatoes are mashed, add Splenda and cinnamon mix in the eggs and vanilla and then stir in the oats. Pour into 12 muffin cups. Bake at 350 for 30 minutes.
The breakdown per muffin is:
Carbs: 19g
Protein: 8g
Fat: 2g
Calories: 124
