Would love to get a thread going after seeing so many come out of the wood work don't be afraid to post . Pharm or gun start it off you guys are the biggest posters on the subject . Or who ever else
 
Haha. Well, what to say. I was actually thinking about putting together a Paleo food porn thread. I guess I can give a preview with dinner tonight.

Bacon wrapped smoky chicken thighs.
Red onion sautéed in lard.
Steamed broccoli with grass fed butter.

Smoky seasoning mixture:
1 tbsp chipotle seasoning
1 tbsp smoked paprika
1 tbsp sea salt
1 tbsp onion powder
1/2 tbsp cinnamon
1/2 fresh ground black pepper

Mix seasonings. Use about 1/2 tsp smoky spice blend per chicken thigh. Roll up in 2 pieces of bacon. Bake for 40 min at 375.

*of course all products are humanely treated, fed a natural diet, organic, etc.

I just posted about onions LOL there are primarily glucose and are 100% natural cant be beat . My primary carbs are onions, sweet potato, pineapple, bananas and apples. ( I eat tons of green beans, carrots, spinach, avocado, nuts, mushrooms, green peas but they don't account for a lot of the total)

I am a salmon monster my self has to be steaks I love the skin , chicken I can eat forever whole roasted chickens I can go through 1 a day 1/2 chicken w/ lunch and dinner..

I'm not a huge fan of onions, but I do like the flavor they add to food. If I chop 'em up small enough and sauté them with mushrooms, peppers......etc, I can tolerate them.



I've got some Paleo recipes, I'll post some up when I have a little more time.
 
Here's tonight's dinner. This is what I would consider a "cheat meal". Much higher carbs than I would usually eat but still clean.

Jalapeño Bison burger with raw Havarti, homemade mayo and bacon on a sweet potato pancake bun. With hand-cut potato chips, fresh guacamole and fermented pickles.

Jalapeño Bison Burgers

1 jalapeño
1 tsp smoked paprika
1 tsp onion powder
sea salt & pepper to taste
1lb ground bison

Finely chop jalapeño and mix all ingredients together, form into patties. Grill or pan fry to desired doneness.

Sweet Potato Pancakes

3 eggs
2 tsp coconut flour
1/2 tsp cinnamon
1/4 tsp ground ginger
1/4 tsp sea salt
2 cups shredded sweet potato

In medium bowl, mix eggs, coconut flour, cinnamon, ginger and sea salt until well combined. Add sweet potato and whisk together. Put coconut oil, ghee, lard, etc in frying pan and add mixture to make ~6" patties. Cook for about 3-4 minutes on med heat until they hold together. Flip and cook another 3-4 minutes.

Assemble burger. Enjoy!!

That looks awesome. Looks like guac jn the background. Got any good tips for making good guacamole?
 
IMHO the secret to good guacamole is to use fresh ingredients and keep it simple.

I fry the chips in either lard or tallow, whatever I have on hand.

I like seeing that other guys can cook too. I learned to cook when I was young. Having an Italian Grandmother living with us growing up, it was impossible not to learn. lol

Yeah brother, I'm a foodie at heart. I love to cook. I usually eat much simpler meals during the day but ill make a nice dinner each night for my wife and
I to enjoy. Good food is so rewarding.

I use my vitamix but an immersion blender, or any other decent blender will work.

Three egg yolks, 1-2 tbsp lemon juice, pinch of sea salt. Blend this up for about 10 seconds then reduce blender speed to 8/10 and slowly pour in 3/4 cup oil of your choice. I use either avocado oil or macadamia nut oil. Both are pretty taste neutral and very healthy.

It will slowly form an emulsion and that's it. Literally takes 3 minutes. Most delicious and creamy mayo you'll ever eat. I use it for my chicken salad recipe, deviled eggs, etc. So good!!

I wish I could take credit for that brilliance, but that is borrowed from Diane Sanfillipo from www.balancedbites.com and author of the book 'Practical Paleo'.

I started up on paleo by reading Robb wolfes book called the paleo solution. Fun read.
Also, "it starts with food" and its associated website, www.thewholethirty.com I also felt we're really useful.

Those are both good. Robb Wolf is incredibly smart and The Whole 30 is an awesome program.

A couple more I'll add is "The Primal Blueprint" by Mark Sisson. His philosophy is geared more towards high fat whereas Loren Cordain still thinks fat should be avoided. I disagree with Cordain.

Another great one coming out is "Your Personal Paleo Code" by Chris Kresser. My beliefs really align with his with regard to food that can be included in a Primal diet. Here is a link with a video preview of it.

awesome thanx. ill prolly use avocado since i believe it has more omega 3's
 
Mustard-balsamic glazed rack of lamb with country olive tapenade and chicken liver pâté on cucumber with grape tomatoes and mint.
