Lets share our recipes to eat these things! I can be pretty creative in the kitchen but I'm having a horrible time finding new ways to eat them.

1. traditional cinn., butter spray, splenda

2. Sliced long ways, seasoned, oiled, and grilled.

1) cut into fries.

2)toss in canola (or what ever neutral flavor oil) cracked black pepper, kosher salt and cayenne.

3) preheat oven AND PAN to 350F

4) bake 30 mins or until crispy, flip, bake another 30 mins

5) voila

6) bust in pants;)

Cold mashed with cinnamon or pumpkin pie spice
Sometimes I freeze them after they are cooked and then eat them slightly thawed
Reminds me of pumpkin pie

Mashed sweet potatoes are easy to make and taste great. It can also serve as a desert.
I usually just cook my sweet potatoes wrapped in foil and grilled for 10 to 15 mins. no need to add any sugar or anything else cause they come out caramelized and tasting great.

Just slice them up, oil them well, season, grill with no foil. Just don't over cook them and take them off while there still firm "think french fry"

Throw a few unpeeled bananas into the oven the last 20 minutes of baking the sweet potatos, and then mash them up with the sweet potatoes.

You can eat them like this or add the good stuff like butter, brown sugar, splenda, honey, cream, or maple syrup etc......:D

This one is not as healthy but for the holidays it's a real treat!

Bacon Wrapped Sweet Potato Bites
The Players

2 medium-small sweet potatoes
1 lb uncured bacon
2 Tbsp butter or ghee from grass-fed cows
1/2 tsp chipotle chili powder
1 Tbsp sea salt
4 Tbsp maple syrup — OPTIONAL (where to find quality maple syrup)
The How-To

Preheat oven to 350F. Peel the sweet potatoes and cut them lengthwise into quarters. Then cut each quarter in half, and then half again. You’ll wind up with 32 bites.

Melt butter over low-heat and stir in chipotle chili powder and sea salt. Toss the potatoes in the spiced, melted butter to coat.

Cut the bacon slices in half, so you have 32 mini-slices of bacon. Wrap each sweet potato bite with a half slice of bacon, and use a toothpick to hold the bacon in place.

Place on a stainless steel baking sheet and bake for 45 minutes, turning once about halfway through.

These are done when the bacon is crispy and the sweet potatoes are fork-tender. Remove from heat, drizzle with maple syrup, and let cool before serving.

Enjoy your bacon wrapped sweet potato bites!
