They say that they are completely boiavailable and that you would absorb the same amount of protein drinking them raw as you would with cooking them. I was always told the opposite. What's the truth?
Raw eggs have avidin, which counters biotin, which keeps your body from taking in all of the available protien. Cooking or heating denatures the protien and changes the avidin. The yolks have a high amount of biotin which would make eating whole raw eggs more effective than raw whites as far as protien goes.

I believe the pasteurization process is what makes them bioavailable and avoids the biotin issue.
yup...the egg whites I buy at wal-mart are pasteurized and you can eat them "raw"...they even have recipes for smoothy shakes lol.

Well, I haven't been to a research facility to determine for sure, however, I've been eating raw egg whites ever since (right at 25 years or so) I watched the first Rocky movie. I haven't had a problem yet. I can always feel my muscles fill when I drink them. I do it both ways, raw and pasteurized. Can't say if I'm getting 100% absorption or not, I know one thing tho, I do gain and stay fuller by using them, than not.
Within an egg here is a big difference between a raw yolk and a raw egg white
Insight? I need to clarify. When I eat them raw, I eat the yoke as well. The pasterized whites are what I eat by themselves.
What should I be worried about, Aeliop?
.
as mentioned earlier by badapple the Avidin that is in the egg whites. This could conceivably block some or all of your protein absorbtion. I
n a nutshell drinking 16oz of egg whites and thinking that you are getting roughly 48grams of Protein when in fact you might be only getting a portion of that. Rule of thumb cook the eggwhites drink the yolks or somewhere in between.
The great Vince Gironda had a method for cooking eggs that he called his $1000 secret. He often said that it was worth $1000 to people but free for his clients.
I gotcha! So the yolk being consumed with the raw whites wouldn't negate this idea?
.
Even if they are pasturized?
.
I can see why! Thanks for you input!
.
The pasturization process does not produce enough heat to kill the Avidim.
Well, I'll be dammed if I do or If I don't! *LOL* I guess it wouldn't do any good to tell you that I've read "scientific studies" saying the opposite. "100% absorption", they (studies) say.
Anyway, I'm confused for show now! I swear tho, it seems like I get one hellacious fill from doing this. Thanx for the info, Aeliop, I think?
