I made this for my wife other night and wanted to share this recipe out of my head for you guys. Good enough for off season. This is probably enough for 1 serve!
Approx 1 cup White Rice uncooked (Can be brown rice too)
Cooked the Rice day before and put it in fridge overnight.
1/2 cup Prawns (Peeled Prawns)
1/2 cup Lean Pork (Cut in Chinese style strips)
1/2 small Onion (Cut Chinese Style)
half clove of fresh Garlic
1/4 cup Julienne Red Capsicum
1/4 cup Zuchinni (Cut lengthway slightly on angle Chinese style)
1/2 cup frozen peas, corn, carrots etc
1 Bok Choy (cut in length way and quarters)
Sweet Soy Sauce (Kecap Manis)
Method:
Heat up your wok or pan very hot, then add pork and stir fried until just cooked. Then put in strainer and set aside and then heat up your pan again with some oil and sitr fried your prawns until just cooked and put in strainer with the Lean Pork. Clean your pan and heat it up hot again and add some oil and then add onions and garlic until soft and then add your capsicum.
Blanch your zuchinni and bok choy just soft and add that to your stir fried just after your capsicum is cook. Add frozen peas,corn etc and then your cooked Rice. Stir fried until your rice is hot and then season it with Sea Salt and Sweet Soy Sauce, just enough to coat all your rice.
My wife love this and wanted me to make this again for her!!
