Fast vs slow digesting carbs post workout?

Hello, I have heard some conflicting ideas on this.

Pre workout and intra I always use fast acting carbs to fuel my workout. Post workout though, I’ve been doing oats.

I’ve read that if not trying to fuel training, it’s best to do slow digesting carbs as they are less likely to be stored as bodyfat. Any truth to this?
 
I don't really look at gi rating when deciding my pre and post meal I just make sure I'm getting enough carbs and it's nutrient dense whole food, so no Gatorade, sugar drinks malto etc, kids cereal, none of that.

Pre is fruit+ some rice cakes with tuna
Post is 8 oz lean ground beef with fruit and some rice cakes usually apple, strawberry, peaches.

I use insulin and make sure to get enough carbs to not to hypo and fruit is more than sufficient, no liquid drinks needed.
